The Grain SA/John Deere recipe competition gives you the opportunity to put your creativity in the kitchen to the test, while also standing a chance to be rewarded for it.

Our July winner* is: Donna Leung from Johannesburg

OXTAIL WITH GROUNDNUT
Enough for five people

Ingredients

Pressure cook
2 kg rinsed oxtail
2 onions, sliced
2 tablespoons minced garlic
2 beef stock cubes
2 tablespoons sugar
¼ cup dark soy sauce
¼ cup light soy sauce
1 cup water
2 cups groundnuts, roasted, salted, no skin
salt and white pepper to taste

Gravy
1 ½ tablespoons corn starch
½ cup water

Method

  1. Boil the oxtail in a pot of water for ten minutes to remove the protein residue.
  2. Rinse the oxtail and then add to a pressure cooker.
  3. Add the rest of the ‘Pressure cook’ ingredients and pressure cook on high for one hour.
  4. Due to oxtail coming in different sizes, check if the oxtail is tender after one hour. If not, pressure cook on high for another 15 minutes. Repeat until the oxtail is tender.

Gravy
To thicken the gravy, add the corn starch and water together and mix until the corn starch is dissolved. Add this to the oxtail and stir on a medium heat until the sauce thickens. If not thick enough, repeat.

Serving
Serve with hot rice, pap, or pasta.

Additional information
If you cannot find dark soy sauce, you can substitute it with light soy sauce, which you can find at grocery stores and sushi restaurants.
